All classes take place in Miami production breweries with the local brewers as your professors.

Malting, Milling, Malt & Enzymes, Mash pH & Temp

Brew Shadow, Spec malts; intro to water

Malt / Water review; Hops & Dry-hopping 

"Synergy"; BrewTech I - brewing systems

 Yeast Biology; Fermentation; Off-Flavors


Saturday - Aug 27 | 9-3 pm:           

Brew Day (brew a 500 L batch - style tbd)

Sunday - OFF



Monday - Aug 29 - Sept 2 | 7-3:30 pm: 

BrewTech II - FV's & filtration

Yeast harvesting, Cellar operations

Plant Engineering


Sanitization - including "running loops" (hands-on)

Recipe Formulation; Wild fermentation

QA / QC & "Starting your own brewery"
